Let me add on to the projecting forward into the show's future theme.
When Maddie goes to visit Armstrong, he mentions something like this: "Do you know what its like wanting to just pick up the phone and call only to know that will make her madder and push her further away?"
Sounds VERY prophetic to the pickle that Dave found himself in during most of Season 4.

3. What new things if any do we find out about David from the scene in Gillian’s hotel suite? Up to this point, we have pretty much seen David as the "good time" guy, rather immature. We are just coming off "My Fair David". Here we learn that David was in a serious, committed relationship. I find it interesting that David admits to Gillian that she broke his heart, another uncharacteristic move for "ol' Addison". This scene and the revelation of David's feelings go a long way in explaining why David is the way that he is. What does he say to Viola in "Sam and Dave"? Something about keeping it light so no one can play stick ball with his guts?

4. When does Maddie stop being intrigued by the relationship with Gillian and start being jealous? Does she realize it? I think the pangs of jealousy start when David asks Maddie to visit Harlan Armstrong. The day before, David dismisses his relationship with Gillian as a "fli". She seems amused by the whole thing. This day, however, she picks up on his intensity and seriousness. Also, she finds out that he visited Gillian the night before. Right then and there, Maddie suspects that it was much more than a "fli". She becomes very irritable. An aside here - the overlapping dialog scene - at one point Maddie says, "I have this bad feeling about her...Gillian...Maybe it's because she's already left you once..." I'd like to know how Maddie knows this. When David asks Maddie to visit Harlan, he beats around the bush a bit, but does admit that there was more to their relationship than he first acknowledged. David never tells her the details of their break-up, I don't think.

And my usual – what is your favorite quotable quote from this episode?
Gosh, so many to choose from. I supposed the line in the hearse.
Maddie: I always thought the first time I’d ride in one of these I’d be on my back. David: Don’t tempt me.”

I think you ladies have a good idea of when Maddie turns into the Green Eyed Snake, however I don’t think she knows it until the scene in the police station when Dave gives Gillian that rather long embrace.

5. When Maddie and David have their overlapping dialogue in David’s office – would it have made a difference if it had been a normal conversation, in which they actually listened to each other? I don't think that it would have changed David's opinion of Gillian or his plans to spend time with her. He would have had much the same reaction to Maddie's warnings that he has when Maddie shows up at the funeral ("you green-eyed snake!"). But, it would have been interesting to see David's reaction to Maddie's admission of jealousy. IMO, that is a pretty big deal at this point in their relationship.

You know, it was very difficult to hear David’s part of the conversation. I had to play it several times and I still don’t think I got it all down (years of explosions…some outgoing…others (unfortunately) incoming will do that to you).
If I catch it right, Maddie was finally trying to give David that bit of help that no one offered her in scene one with the flat tire. She felt that David should hear her opinion on the matter, even if he didn’t heed it. Dave was more concerned with hitting the funeral and then going on an extended vacation, courtesy of Harlan Armstrong’s insurance money.

When Maddie says “You idiot!”….is she only speaking to David, or might part of the utterance be for her?I always thought the idiot comment in David’s office was aimed at herself, for opening up like that and not getting the desired response from him, and for her inability to express her misgivings about Gillian. The follow on at the funeral was obviously directed right at old Dave. Agree with gray on this one. Maddie almost whispers the words as if she is talking to herself and not directing them at David.

Something about keeping it light so no one can play stick ball with his guts? And knowing what we know it's almost sadistic the torture David has endured in his pursuit of finding the perfect girl. Settling down is obviously important to David; not in the sense of his personality yet an unconditional love that accepts him as he is...warts and all.

7. The rose…. Should he have or should he not have left it? Why didn’t he? Well, as much as I would have loved for David to leave the rose, it really wasn't time yet. I think that Maddie's jealousy (and what that implied) initially emboldened him to leave the rose and the note. He also wanted to apologize for questioning her motives in warning him about Gillian. In the end, however, he wasn't going to open himself up to Maddie and risk getting hurt - he decided to get back to the old "devil-may-care", fun-loving character that shields him from all that angst. A peek from the script - David's note does not include the word "love". It is just signed, "D".

I always got the impression they heard each other though: David and Maddie always heard the others responses in overlapping dialogue.

8. I'm projecting forward into the show’s future for this question: Gillian’s treatment of David was quite awful. Why does she not evoke the fan emotion…dare I say, hatred….that Annie does? IMO, fan hatred of Annie centers around the fact that she was an obstacle to the reconciliation of Maddie and David - that thing that fans so desperately wished for. She also was Maddie's cousin and friend which made it even worse. Gillian happened early on in the series when Maddie and David were in flirtation mode. Their personal relationship was not yet developed so there was not the same fury that was unleashed with Annie. Even though Gillian did hurt David, that alone would not evoke the same emotion as a post-IACM, post-S4 and post-baby romance.
